Hello Ladies... Thought this would be fun!!! My girlfriends laugh at me all of the time because I'm known for "whippin' up something QUICK"... esp. in the middle of a huge project or order. So... if you have any recipes you'd like to share... please do so!!! This one is a favorite!!! It frees up your hands and it's Healthy!!! Oven Fried Chicken 1 beaten egg 3 tablespoons milk 1 cup finely crushed Saltine Cracker (about 28 crackers) 1 teaspoon dried thyme, crushed 1/2 teaspoon paprika 1/8 teaspoon pepper 2 1/2- 3 pounds meaty chicken pieces 2 Tablespoons margarine or butter, melted. In a small bowl, combine the egg and milk. In a shallow dish, combine the crackers, thyme, paprika, and pepper. Set aside. Skin chicken. Rinse chicken, pat dry with paper towels. Dip chicken pieces, one at time, in egg mixture, then roll in cracker mixture. In a greased 15x10x1-inch baking pan arrange chicken so the pieces don’t touch. Drizzle chicken pieces with melted margarine or butter. Bake in 375~ oven for 45 to 55 minutes or till the chicken pieces are tender and no longer pink. Do not turn chicken pieces while baking. Makes 6 servings

  • ZIP LOCK Omelets! Quick & No MESS!!!

    This a recipe I found and I LOVE IT! It allows for big families or groups to all get their omelets piping hot at the SAME TIME!!! No Frying!!! No extra fat!

    1) Start a BIGGGG pot (Dutch Oven Size) with boiling water!!! Water much be rolling before you can use it. DO NOT ADD ANYTHING to your water.

    2) Prepare and set out in buffet style all of your favorite ingrediants that you want to put in your omelet (spinach, turkey bacon, garlic, onions, peppers, cheese...etc.)

    3) Give each person their own Gallon size zip lock freezer bag and write their names with a sharpie on it.

    4) Crack 3 eggs in each bag... (if using only egg whites... use 4), shake until egg is well "scrambled".

    5) Add all of the ingrediants from your "buffet" to your bag and shake again for another 30 seconds.

    6) Make sure your bags are sealed correctly and add up to 7 bags at a time to the boiling rolling... very hot water. Let cook for 13 -15 minutes.

    7) Carefully remove omelet bag from water and place on towel. Roll omelet over so it releases easily onto plate...

    ENJOY!!!

    My family LOVES this recipe... it's FUN, it's fairly quick and it's NOT MESSY!!!! I've also used this on retreats...again, the guest LOVED it!

  • Here's another one.....REALLY QUICK and delicious! AND great for those left overs...

    Shrimp Fried Rice


    2 1/2 cups cold cooked rice
    2 tablespoons peanut oil or sesame oil, divided
    1/2 pound small shrimp
    1/2 cup diced turkey ham
    2 scallions, thinly sliced
    1/2red bell pepper, seeded, diced
    1/2cup frozen peas, thawed
    2 large eggs
    1 cup bean sprouts
    1 tablespoon soy sauce

    Stir rice to separate grains. In large nonstick skillet or wok, heat 1 tablespoon of oil. Add shrimp and turkey. Cook, tossing lightly, just until shrimp turn pink, about 1 minute.

    Transfer shrimp & turkey to plate, keep warm. In same skillet heat remaining 1 tablespoon oil. Add scallions, bell pepper and peas, cook, stirring as needed, until softened, about 3 minutes.
  • My One pot dish , I recommend an oven safe handle pot, saute some (season with salt ,pepper, whatever you use) chicken breast or boneless thighs about 4-5 pieces, when it is cooked throughly( but not overcooked especially the breast meat) open up a can of peaches, save the juice ,take the same can and add one can of water to the juice add to the chicken put on very low heat, let it come to a boil,turn off the fire, then open a box of stove top stuffing into the pan and cover for about 15mins , until all the liquid has been absorbed. If you like you can add the peaches to the top and some grated cheddar cheeese and stick until the broiler for a few minutes, serve. delicious!!!!!!

  • Here is a recipe for any mom on the go that will take less than 30 mins to prepare! I call this one,
    "Turkey Stuffed Roll-ups"

    Ingredients needed;
    1lb of sliced smoked turkey breast
    1 box of stove top stuffing(any flavor)
    2 cans of turkey gravy(you can make your own if you wish)
    2lbs of your favorite fresh veggies
    1 tsp of olive oil


    Preparation and Cooking;

    seperate your turkey into double slices or single (depending on family size)

    follow directions on the back of stuffing box for perparing (do this now)

    Put your veggies in a saucepan with 2tbsp of water and the 1tsp of olive oil like stem for about 5-10 mins
    (depending on how you like your veggies cooked)

    Now get a table spoon and scoop out 2 to 3 scoops of stuffing per turkey slice,
    spread the stuffing on the turkey and roll from one end to the other;
    place turkey roll in a long square baking pan, for non stick baking use a glass
    pan if you have one; place with the rolled side facing down, poor gravy over finished roll-ups
    Bake for 5-10mins and your all done!
  • Pina Colada (Alcohol & Dairy - Free)

    1 Sm Pineapple
    1 Banana
    5 Strawberries
    1/4 Cup Coconut Milk
    1-2 Tbsp Raw Natural Brown Sugar or Sweetner of Choice
    Juice of Half A Lemon
    1/2 Cup Water


    Cut & Chop fruit. Pour coconut milk into blender. Add fruit, lemon juice, water, sugar & ice. Blend until ingredients are smooth. Pour into cups & serve.

    Serves 2-3
