Asian Zen Peanut ShrimpIngredientsAsian Zen™ Noodle & Sauce Mix1 cup water1/3 cup oil1/2 cup peanut butter1 lb. cooked, cleaned shrimp2 Tbsp. sliced green onionsChopped peanutsDirectionsCombine Sauce Mix packet and next 3 ingredients in a small bowl; whisk well to blend. Pour sauce into a large skillet; heat gently over low heat. Add shrimp; heat gently for 2-3 minutes until shrimp is heated through. While sauce cooks, bring 2 quarts of water to a boil in a large saucepan; stir in noodles. Boil 5 minutes; stirring occasionally (watch carefully to avoid boiling over); drain. Serve sauce over hot noodles; garnish with green onions and peanuts. Makes 3-4 servings.Asian Zen Chicken Pasta SaladIngredientsAsian Zen™ Noodle & Sauce Mix2 - 3 cups cubed rotisserie chicken1 diced red bell pepper16 oz. shredded cabbage or coleslaw mix1/2 cup chopped peanutsFresh chopped cilantro for garnishDirectionsPrepare noodles and sauce mix as directed on package. Add chicken and red bell pepper. Chill 1 hour. Stir in shredded cabbage just before serving; garnish with peanuts and cilantro. Serve with purchased egg rolls. Makes 8-10 servings.Asian Zen Vegetable SaladIngredientsAsian Zen™ Noodle & Sauce Mix1/2 cup chopped broccoli florets1/2 cup Chinese pea pods8 oz. can sliced water chestnuts, drained & chopped1/4 cup diced red bell pepper1 cup water1/3 cup vegetable oilDirectionsBring 3 quarts of water to a boil in a large saucepan; stir in noodles, broccoli and pea pods. Boil 5 minutes, stirring occasionally. (Watch carefully to avoid boiling over.) Rinse noodles and vegetables in cold water; drain and set aside. Combine contents of Packet 2 with 1 cup water and oil; whisk to blend. Add prepared sauce and remaining ingredients to noodle mixture; cover and chill 1 hour.
